quick easy lasagna
I love Lasagna!  OMG its the best thing ever.  it’s like a hodge podge of pasta, sauce, meat and cheese.  Who can resist? However, not ALL Lasagna’s are created equal.  It takes time and skill to make a good one.  My family (namely my sons) LOVE Lasagna.  They like it thick and cheesy!  If you are busy mother like me then you will probably want to know the quickest and easiest way to make a delicious pan of Lasagna that will feed many and here it is…

What you Need:
1 – 32 oz Jar of Spaghetti Sauce
1 – box of lasagna noodles.
Lasagna Pan

Meats
2.5 lbs ground beef
1 lb of breakfast sausage
Pepperoni

Veggies
Green Pepper
Onion
Garlic Clove (Chopped or minced)

Cheeses
Shredded Cheddar (or a blend)
Shredded mozzerella
Ricotta

Seasonings
Garlic & Herb Seasoning
Salt
Pepper
Oregano
1 Egg

Boil the lasagna noodles per the instructions on the package. Brown the Ground Beef in one pan and the breakfast sausage in another. Chop the Green Pepper, and the onions and add them and the chopped or minced garlic to the ground beef while its cooking. Season with garlic & herb seasoning, salt, Pepper, Oregano to taste

Pour the grease off the meats (ground beef and sausage) and add it the spaghetti sauce in another pot. Simmer this for about 15 minutes.

While that is simmering take 2 cups of Ricotta cheese, scramble 1 egg and blend the 2 together. add in 1/2 cup of the mozerella cheese to the mixture and season with salt, pepper, garlic & herb and oregano. to taste.

Once the noodles are done start layering.

Start with a ladle full of the meat sauce on the bottom of the pan. cover that with some of the shredded cheese (mozzerella, cheddar or some of both) cover with a layer of noodles. Go again with a layer of the sauce. this time add a layer of pepperoni, then shredded cheese than noodles.
For the last layer… A layer of the ricotta mixture. Then meat sauce, then pepperoni, then cheese. If your pan is deep enough keep layering however you want. but end with a layer of sauce and sprinkle cheese on top. Bake this for 15 -20 minutes uncovered or until it bubbles over.

Serve this with whatever your favorite bread is and maybe a salad.  Guaranteed to fill empty stomachs and known to cause itis!!  Enjoy!
