Eating Healthy with HelloFresh

Coconut-Crusted Chicken Fingers with Roasted Green Beans and Potato Wedges  

This dish was easy to make and the instructions were simple to understand.  I must admit that initially I want to bread and and fry that chicken and those potatoes and deep boil the green beans with a ham hock… but I didn’t.  I followed the recipe to the letter.  This meant roasting the potatoes and the green beans in the oven and dredging the chicken in honey and lightly cooking it in olive oil.  The flavors were there.  The texture was there and my family loved it.  Win.

Italian Sausage and Baby Broccoli Pasta with Oregano Gremolata and Parmesan Cheese.

This one was the family favorite.  I really enjoyed the gremolata the most!  I grow oregano and had never thought to use it in this way before.  All of the flavors in this dish stood out.  Especially the lemon zest.  This was the 2nd recipe that I chose to prepare so by now I am familiar with process which did not take long.  I am not a fan of Italian Sausage but I really enjoyed it in this.

I was initially hesitant about this one because I don’t grow, cook or eat zucchini.  It wasn’t a winner for us.  I don’t believe i prepared the scallion rice correctly and the zucchini… not so much.  We did give this meal a try though and ended up eating the sticky scallion rice with the Sesame Shrimp alone and that was good.  Hey, you can’t win them all!  I now know that the only way I like zucchini is raw!

This was a great experience and I learned so much while preparing these meals.  I learned that I do not have to FRY everything to make it taste good.  I also learned new uses for some of the herbs that I am already growing in my container garden.  Most importantly I learned that eating healthier does not have to be complicated.  I feel like I can apply what I learned using the ingredients and recipes from Hello Fresh to new recipes of my own.  I’m not waiting until the New Year to START getting healthy!  I’m starting RIGHT NOW!
